Mojito Cafe is an adorable latin inspired restaurant at the Virginia Beach Oceanfront specializing in Puerto Rican and Cuban food.   This adorable spot was nominated by one of the employees who just loves working for the owner, Edwin.    I had the pleasure of sitting down with Edwin for a while and talking about how Mojito Cafe all began.   I loved chatting with him, he’s incredibly down to earth and caring about his employees and customers.   I loved his quiet demeanor and positive outlook on life and business.

When I walked in I immediately loved the atmosphere!   The small cozy cafe is inviting and warm.   I love Edwin’s purposeful decision to not have TV’s so that guests can enjoy their company with one another.   Edwin and his wife spent a week in Puerto Rico brainstorming ideas before making this dream a reality.   The photos on the wall were all taken by Edwin, who also enjoys photography!    I was quite impressed!   The artwork is by a very loyal customer, Kay Meyer.

My favorite part was seeing all the decor around the Cafe that was given to them from their favorite customers.   Edwin said he has even more at home!   Edwin and his amazing little Cafe are truly loved by their regulars!

Edwin mentors students from the Culinary Institute of Virginia regularly and often keeps them on staff when they do a great job!  He is also passionate about recycling.   He cooks everything from scratch and said he even does at home most of the time too!   (For someone who hardly cooks at all, this is pretty crazy in my mind haha.)
